There are a lot of good Minestrone recipes out there, I mean A LOT!
But I wanted to create one that I knew was going to taste AMAZING but also help to nourish my body and support my hormones!
I am not going to bore you with what each amazing ingredient does, or why your hormones are going to love it- but just know that every mouthful is going to help detoxify, support and nourish your body- just like real food should! (Oh and did I mention this is a one pot wonder yasss!)
INGREDIENTS: (All organic where possible)
-
1 medium yellow onion diced
-
2 table spoons of olive oil
-
3 stalks of celery
-
4 cloves of garlic minced
-
2 cups of your fave veggies diced (I used a combo of zucchini, carrot, potato, cauliflower, peas, spinach + capsicum)
-
5-6 cups of your fave organic veggie broth/stock
-
1 can diced tomatoes
-
1 Tablespoon miso paste (optional)
-
2 Tablespoons nutritional yeast (and more to top soup if desired)
-
1 cup -1 ½ cups gluten free, pulse or spelt pasta
-
1 can cannellini beans, drained and rinsed
-
Your favourite herbs, I used thyme, pepper, and some dried chilli
DIRECTIONS
-
In a large pot add the oil and diced onion, garlic and celery. Sauté over medium-high heat for 7 minutes or until the veggies are tender.
-
Add the vegetable broth, diced tomatoes, and bring to a boil, then lower to a simmer.
-
Add in your favourite herbs/ spices
-
Add the pasta, beans, nutritional yeast, miso, and mixed veggies, and simmer until the pasta is almost tender, add in the spinach right at the end.
-
Continue to simmer until the pasta is tender.
-
Serve with your favourite toppings (ie more nutritional yeast, pepper, salt parsley etc!)
Serves 4-6 (or double it and freeze for when you are feeling lazy hehe)
ENJOY!
