The Ultimate Soft + Chewy Healthy Gingerbread Cookies! (V, GF, RSF)
Oh Em Geeeeee these are INSANELY GOOD!
Honestly I was looking for festive treat that I could recreate for the holiday season, but everything is so rich and sweet!! (I have never been a fan of plum pudding, even though every year I pretend to be because my Nannie has spent weeks preparing it lol!)
BUT something I have ALWAYS loved is gingerbread!! However unfortunately for me traditionally made gingerbread is full of ingredients that my hormones are not overly keen on, so I did what I always do and made HEALTHY and hormone friendly version of it!!… and honestly its AMAZING.
Not to mention its vegan, gluten free, low carb, refined sugar free, paleo, grain free AND full of hormone loving ingredients like flaxseed, coconut flour, molasses, cinnamon, ginger and dark chocolate! Yasssss!
ANYWAY its the perfect healthy christmas treat, so less talking, more baking
INGREDIENTS:
- 1/3 cup cashew butter
- 1/4 cup blackstrap molasses
- 2 tablespoons coconut oil (soft like butter)
- 1/2 cup coconut sugar
- 2 flax eggs (2 tablespoons ground flax + 5 tablespoons water)
- 1 teaspoon vanilla extract
- 1 teaspoon each ginger and cinnamon
- 1/2 cup + 2 tablespoons coconut flour*
- 1 teaspoon baking powder
EXTRAS
- 50g 75- 90% dark vegan chocolate (melted)
- 1/4 cup coconut sugar + 1/2 teaspoon cinnamon to roll dough onto to stop it sticking to the board.
DIRECTIONS:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper
- In a large bowl, whisk together coconut oil, cashew butter, molasses, coconut sugar, flax eggs and vanilla extract until creamy
- Mix in the remaining cookie ingredients and stir until full combined (no clumps)
- Roll dough into a ball
- Sprinkle a chopping board with the extra coconut sugar and cinnamon (to stop dough from sticking)
- Roll the dough out onto the board then use cookie cutters to make the cookie shapes and then place onto baking sheet (repeat for each cookie)
- Bake in oven for about 10-12 minutes
- Allow the cookies to cool for and then drizzle melted dark chocolate over the cookies.
- Wait for the chocolate to set then ENJOY!
